Scrumptious French style Cassava flour crepes are so incredibly simple to make! You can create sweet crepes by filling them with your favorite jams, or fruit and yogurt combinations. Perhaps you prefer a savory crepe? Simply fill crepes with spinach and herbs, or ham and cheese, for a delightful breakfast or lunch.
1 cup cassava flour
1 can whole fat coconut milk
2 whole eggs
1 tablespoon melted ghee or melted coconut oil
1 tablespoon coconut sugar
1/2 teaspoon sea salt
For cooking you will need
1 teaspoon of ghee or coconut oil for each crepe
Makes 6-8 crepes
1). Blend all ingredients in a high speed blender for 20 seconds until batter is achieved.
2). Chill batter for 30 minutes in refrigerator.
3). Warm skillet and melt in fats. Pour 1/3 cup batter into skillet. Rotate skillet to evenly coat with batter. Cook for 3 minutes on each side.
4). Repeat steps with remaining batter. Fill or garnish with your choice fruits, jam or syrup.
