Cassava Flour Tortillas (Flat Breads or Pizza Crust)
If you’re a gluten-free or paleo eater, you know how popular Cassava flour tortillas are these days, and you know how EASY they are to make! While I have appreciated the availability of cassava flour tortilla recipes online, I found them bland, cardboard in texture, and flavorless. After a few experiments, I have successfully achieved a flavorful tortilla that was positively enhanced with just a few ingredient changes! Using homemade broth and a delicious fat, like duck fat, the tortillas turned out much more delicious in taste and texture. You have endless options on what to make! 1 cup cassava flour
1/2 cup warm homemade chicken broth, beef broth, or water
1/3 cup melted beef tallow, duck fat or homemade bacon fat (or olive oil)
1/2 teaspoon of ground garlic powder
1/2 teaspoon of sea salt
Makes 6 tortillas
1). Combine ingredients in a large bowl. Use your hands to mix and combine ingredients into a ball.
2). Heat a large cast iron skillet or griddle. Keep on medium heat.
3). Form 6 balls. Place one ball at a time between 2 pieces of parchment or wax paper. Use a rolling pin to press out into a 5 to 6-inch tortilla.
4). Cook tortillas for 3-4 minutes on each side. Eat while warm. Fill with your favorite taco ingredients or top with your favorite pizza toppings, spread, etc… Store any leftover tortillas in an air-tight container or zip lock bag
