From the gluten-loaded food world, there's one thing I've absolutely missed eating and this has been a Croque Madame, which is a Grilled Ham and Cheese, with an egg on top. While shopping at Costco, I was THRILLED to see a 2 pound bag of Organic Cauliflower rice (see photo below), and making Croque Madam sandwiches was the first thing that popped into my head. From this bag, I was able to make 6 flat breads and a pizza crust. You can also make it into a Focaccia Bread! I love that it's organic and prepped for use. Back to the bread...This Cauliflower Flat Bread makes an outstanding substitute for us gf eaters to, once again, be able to enjoy our all-time favorite sandwiches. I hope you'll make it and fulfill all your sandwich (or pizza/focaccia) cravings as well!
NOTE: Did you know that this recipe can be made stove top and in a skillet? Yep. No need to turn the oven on! Prep my recipe and see instructions below.
5 cups of raw grated cauliflower
3 whole eggs (or use flax eggs)
1/2 cup almond flour
1/4 cup cassava flour
1 teaspoon garlic powder
1 teaspoon dried italian herbs
1/2 teaspoon sea salt
Makes 6 flat breads or 1 crust
1). Preheat oven to 400 degrees
2). Line a baking sheet with parchment paper
3). Combine all ingredients in a medium mixing bowl. Using clean hands, form this thick batter into 6 round or square flat breads (or into 1 large pizza or focaccia bread). Bake for 25-30 minutes, or until golden brown.
HOW TO MAKE STOVE TOP
1. Heat skillet and coat skillet with 1 tablespoon of either coconut oil or ghee.
2. Pour in batter. Cook over medium to low heat for 10 minutes, then flip and cook the other side for 10 more minutes.
3. Turn heat off and let it sit in skillet for 10-15 minuets, then slice as focaccia sandwich bread or top with your favorite ingredients to make pizza.
