Cauliflower Flat Breads and Pizza Crust

From the gluten-loaded food world, there's one thing I've absolutely missed eating and this has been a Croque Madame, which is a Grilled Ham and Cheese, with an egg on top. While shopping at Costco, I was THRILLED to see a 2 pound bag of Organic Cauliflower rice (see photo below), and making Croque Madam sandwiches was the first thing that popped into my head. From this bag, I was able to make 6 flat breads and a pizza crust. I love that it's organic and prepped for use. Back to the bread...This Cauliflower Flat Bread makes an outstanding substitute for us gf eaters to, once again, be able to enjoy our all-time favorite sandwiches. It also makes a terrific dairy-free alternative to the common Cauliflower Pizza Crust. I hope you'll make it and fulfill all your sandwich cravings as well!




  • 5 cups of raw grated cauliflower 
  • 3 whole eggs (or use flax eggs)
  • 1/2 cup almond flour
  • 1/4 cup cassava flour
  • 1 teaspoon garlic powder
  • 1 teaspoon dried italian herbs
  • 1/2 teaspoon sea salt

Makes 6 flat breads

How To

1). Preheat oven to 400 degrees

2). Line a baking sheet with parchment paper

3). Combine all ingredients in a medium mixing bowl. Using clean hands, form this thick batter into 6 round or square flat breads. Bake for 25-30 minutes, or until golden brown.
