Talk about total enjoyment! Fluffy waffles topped off with coconut milk yogurt, strawberry sauce, blueberries, and chopped pistachios! Easy to prep, easy to cook, and fun to present to your family!

For a fruit loaded option, simply follow the recipe down below and then fold in 1 cup of your choice chopped fruit into the batter.

Ingredients

  • 2 whole eggs
  • 1/2 cup whole fat coconut milk
  • 1/2 cup Cassava flour
  • 1/2 cup Almond flour
  •  1 tablespoon maple syrup
  • 1/4 teaspoon sea salt
  • 2 teaspoons melted coconut oil or ghee

For cooking you will need an extra

  • 1 teaspoon of ghee or coconut oil for each waffle well.

Makes 8 small or 2 large waffles

How to

1). Warm up waffle iron. Brush each well with ghee or coconut oil.

2). Combine all ingredients in a large bowl. Whisk to incorporate.

3). Pour 1/4 cup batter into each waffle well. Cook for 3-4 minutes. Flip waffle iron and cook for 3-4 more minutes.

4). Remove waffles and plate. Top with your favorite waffle topings (fruit sauce, maple syrup, fresh fruit, yogurt, etc)
