The first day of Summer is here and I want to make sure I've got some chilled, guilt-free snacks on hand, to enjoy during the hot days! I got an idea for making some yummy fresh snacks that called for turning my winter baking pans into chill pans so I could make these Pretty Cherry Jellies. You can use any kind of fruit that you desire, but make sure it's fresh fruit, so that it will be sure to refresh you! Not only are they cute, these jellies are a healthy snack choice, and they travel well. In different colors, these cuties are fun for kids, and are a hit at a baby shower, bridal shower, or for a girls night in!

Makes 24


  • 18 cherries, pitted (or 1/3 cup your choice fresh fruit)
  • 1 can of whole fat coconut milk (or your choice nut milk)
  • 3 tablespoons of maple syrup
  • 2 tablespoons of gelatin (preferably grass fed)
  • juice from 1/2 of a fresh lemon
  • 1/4 teaspoon of melted coconut oil

How To

Put all ingredients into a high speed blender, such as a Vitamix machine. Blend on highest settings for 30 seconds. Pour into mold cavities. Chill for 2 hours. Don't be alarmed to see that the fruit has separated, and looks quite pretty too! The Jellies will easily pop out of cavities. Store any remaining jellies in a covered container for up to 3 days.
