Sausage & Bean Frittata

Its got Beet greens in it? Yep, and its also got sausage, beans, greens and white cheddar...Ooooh, it tastes great! See that golden color peeking out from underneath? It's all that melted cheese crispiness that created a crust!

Provides enough for 4-6 servings

Ingredients

  • 2 cooked gluten-free sausages, diced into small pieces (I used Fra'mani Salt and Pepper Sausages)
  • 2 cups cooked beans (I used organic canned no salt added cannelini beans)
  • 2 whole eggs
  • 1 cup shredded cheese (I used raw white cheddar cheese)
  • 1 cup chopped greens of your choice (I used the green tops from my beet bunch)
  • 1/2 red onion, diced

You'll need 1 tablespoon of coconut oil or ghee for the skillet.

 

How To

  1. Combine all ingredients into a large bowl. Using your clean hands, smash beans and work ingredients into a nice blended mixture.
  2. Preheat oven to 350 degrees.
  3. Warm coconut oil or ghee in a medium skillet. Spoon mix into skillet. Cook over medium heat on a stove top for 5 minutes. Transfter to oven and bake for 15 minutes.
  4. Remove from oven and serve immediately.
