Coconut Milk Pudding Parfait

You can make this gorgeous dairy-free, gluten-free dessert in less than 10 minutes! Individual pudding parfaits can be served at bridal showers, dinner parties, or when you're sitting at home watching tv. In addition to being so pretty, this pudding is nutrient loaded and so good for you! Using the same pudding, you can also create a variety of tasty desserts, as you can see in the photos below!


  • 1 can of whole fat coconut milk
  • 2 teaspoons of grass fed gelatin
  • 2 teaspoons of white or black chia seeds (optional, I used white here)
  • 1 tablespoon of maple syrup or raw honey
  • 1/2 cup of your choice chopped fruit and toppings

Makes 2 servings

How To

1). Blend all ingredients in a high speed blender for 30-40 seconds. The pudding will thicken immediately. You can chill or eat at room temperature. Pour into serving bowls. Garnish with fresh fruit and your favorite choice toppings.
